If you can think of one area of the grocery store that’s been around since – well, pretty much literally – the beginning of time, and will (Lord willing) be around ’til the end of time, that would be fresh fruits and vegetables.

Hanging my head in shame, I’ve said it before, I am not a lover of vegetables. I do however serve vegetables to my husband and children, and just to show I’m not a complete ninny, I will put a small serving on my own plate. Throw any fruit my way however, and it’s gone in three seconds flat. Well maybe not a watermelon.

Just two nights ago I sat with a group of cronies and chatted about juicers. (Did you know “juicing” was a verb these days?! Huh!). One recipe my friends were trying has kale, spinach, cucumber, pear and apple. Not a bad way to get your vitamins and antioxidants, using fresh produce in a drinkable format.

The Produce Mom (known to friends as “Lori”) knows her fruits & veggies.
