I don’t get to make it any more because of dietary restrictions, but lasagna is my specialty. I make it with penne noodles, so it’s super easy…and delicious.

My favorite “go-to” meal is a pork tenderloin — brined, rubbed, then on the grill it goes!

My family loves it when we have Mexican night, I will make guacamole and chicken fajitas, this past week I made up a very easy and yummy pork carnitas recipe using salsa verde. I will definitely be putting this in my cookbook! My goal is to get our oldest of three boys off to college next year with some easy and healthy recipes so he can still have some of his favorites and not have to live off ramen noodles!

I love to make anything in the crock pot. I love walking in from a long day at work to know that I don’t have to cook dinner.

Chicken Nachos… Dice some grilled chicken- spread over nacho chips or Dorito’s- spread diced peppers, tomatoes, etc. cover with shredded cheese- microwave each plate for 90 seconds-serve with guacamole and ranch dip. The entire meal takes less than 20 minutes to make and you can customize each plate for each family member easily (no veggies/xtra veggies/shrimp instead of chicken…etc.).
Enjoy!!!
